Un Honjozo élaboré à partir de riz Gohyakumangoku poli à 60 % dans cette kura de Fukui, spécialisée dans la méthode de brassage yamahai. Le Gohyakumangoku, riz à sake prédominant du Hokuriku, apporte un caractère pur et léger, bien adapté à la production de Honjozo. L'influence du yamahai ajoute une subtile profondeur lactique au style maison autrement vif et sec.
