Tokubetsu honjozo élaboré à partir de Gohyakumangoku poli à 60%, brassé avec la levure Ogawa et l'eau de source de la montagne Tsukuba, dans cette brasserie fondée en 1877. La levure Ogawa apporte des notes caractéristiques de banane et de melon, tandis que l'umami minéral du Gohyakumangoku et la finale sèche et vive font de ce sake un accompagnement culinaire propre et précis.
