Kikusui Junmai Ginjo Hiyaoroshi est un junmai ginjo de la Kikusui Shuzo à Niigata, pasteurisé une seule fois au printemps puis vieilli en cave jusqu'à l'automne avant d'être mis en bouteille sans nouvelle pasteurisation. Ce processus de maturation estivale arrondit les saveurs et intègre les arômes, donnant un sake équilibré et moelleux aux notes fruitées typiques du ginjo.
