La méthode jikagumi préserve toute l'intensité de la fermentation yamahai, avec un taux d'alcool naturel élevé et une saveur riche, sèche et complexe. Le riz Oseto, variété traditionnelle de Nara, confère authenticité régionale et un caractère céréalier robuste à cette expression audacieuse.
