Karakuchi Yamahai Tokubetsu Junmai Asahi Kasui Hiire est un sake de méthode yamahai d'Ookurahonke à Nara, pasteurisé selon la douce technique kasui à l'eau courante pour stabiliser la saveur tout en préservant la complexité. Brassé avec du riz Asahi sans alcool ajouté, il porte le caractère sec, terreux et robuste emblématique du style yamahai. La pasteurisation soignée permet à ce sake de se développer gracieusement avec le temps grâce à la profondeur typique de la production yamahai.
