Poli à 60 % ou moins et brassé sans alcool ajouté, le sake conserve le caractère doux et moelleux typique du junmai ginjo pasteurisé. La gamme Yamatomoi s'appuie sur l'identité brassicole historique de Nara, cette version offrant un profil plus arrondi et plus établi que ses homologues namazake.
