Description
La fermentation kimoto et au moins cinq ans de vieillissement à température glaciaire définissent ce junmai daiginjo d'une kura de Saitama devenue la première brasserie all-junmai d'après-guerre du Japon en 1987. L'eau dure de l'aquifère de la Chichibu et la longue maturation donnent un sake d'une profondeur remarquable, qui se savoure idéalement chaud entre 45 et 55 degrés Celsius.
