Harushika Junmai Ginjonamatsumezake Hiyaoroshi de KK Imanishiseibeisyouten à Nara est un sake vieilli en été et mis en vente à l'automne, pasteurisé une seule fois au printemps, puis conservé pendant les mois chauds avant d'être mis en bouteille sans seconde pasteurisation à l'automne. Cette tradition hiyaoroshi produit un sake au caractère doux et arrondi, développé au cours de la maturation estivale.
