Hakukoma Nama Junmaigenshu est un sake de pur riz non dilue et non pasteurise de Hakukoma Shuzo a Imanosho, Fukui, qui capture la vitalite brute de la cuve de fermentation au moment de la mise en bouteille. Aucun alcool distille n'est ajoute, aucune dilution ni pasteurisation n'est appliquee, presentant le sake dans sa forme la plus brute et naturelle. Les hivers froids de Fukui et l'eau pure de fonte des neiges des montagnes de Hokuriku fagonnent le caractere ferme et corse qui definit cette expression genshu.
