Le Hinowa Junmai Daiginjo Murokanamagenshu d'Eiko Fuji utilise du riz Tsuya Hime poli à 50% et est mis en bouteille non filtré, non pasteurisé et non dilué chez Fuji Shuzo (fondé en 1778) à Tsuruoka, Yamagata, où la 13e génération de la famille Kato poursuit une tradition de brassage de plus de deux siècles. Des arômes vifs de melon et de fruits à noyau définissent cette expression fraîche et pleinement concentrée du style muroka nama genshu emblématique de la brasserie.
