Il s'agit d'une gamme de base présente depuis les débuts du sake Edo Kaijo. À l'image de Tokyo, qui se transforme chaque jour, la levure et la méthode de fabrication changent à chaque cuve, offrant à chaque fois des saveurs, des arômes et des nuances différentes. Trois types de riz sont utilisés : Yamada Nishiki, Omachi et Miyama Nishiki.
