Daiginjo poli à 40% à partir de Yamada Nishiki, brassé par Iinuma Honke à Shisui, Chiba, pendant la période la plus froide (daikan) de l'hiver avec près de 40 jours de fermentation à basse température. Le sake offre un arôme ginjo fruité rappelant la pomme et la poire, avec une douceur délicate qui se dissout proprement en bouche.
