Vieilli à basse température pendant plus de six mois après le pressurage, ce junmai ginjo non filtré, non chauffé et pleine force développe une douceur riche rappelant le miel ainsi qu'une texture onctueuse et moelleuse, grâce au Yamada Nishiki cultivé biologiquement par la brasserie elle-même.
