
Description
Notre classique, Blue Door, est un junmai namazake. Destiné à être servi localement, frais, et dégusté peu après la fin du processus de fermentation. Nous utilisons un mélange de riz calrose et yamada nishiki poli à plus de 70 % et fermenté à une température légèrement plus élevée que nos ginjo. Le résultat est un sake généreux, terreux, sec et chargé d'umami, avec de subtiles notes de banane et de melon mûr.
