Tokubetsu Junmai commercialisé comme un hiyaoroshi (sake d'automne pasteurisé une seule fois) par la brasserie Tsurunoe à Aizu Wakamatsu, Fukushima. Après un été de vieillissement en cuve à température ambiante, le sake développe un umami arrondi avec une acidité douce qui structure le corps.
