Le sake est préparé avec 6 tonnes d'eau de source naturelle par heure dans la brasserie. La société a été fondée en 1875. C'est de là que le premier Iizuhikozaemon, séduit par une eau de source de haute qualité semblant intarissable, a commencé l'aventure. Le nom Ayu Masamune a été donné lors d'une pêche dans cette région par Hosho Wakamiya de Kyoto Fushimi, qui séjournait à Akakura dans la ville de Myoko Kogen, région récréative célèbre à l'ère Showa.
