Junmai Daiginjo genshu a 50% de pulido, fermentado con la levadura propia Yukitsubaki de la cervecería, recogida de las flores de camelia del parque de la montaña Kamo, y embotellado como shiboritate (recién prensado) namazake en invierno. Los aromas ginjo de manzana y plátano, el paladar rico y el largo final hacen de esta edición estacional limitada una salida disponible solo a partir de noviembre.
