Tomitsuru Tokubetsu Junmai combina Yamada Nishiki y Gohyakumangoku pulidos al 60 %, elaborado por Aichi Shuzo en Aishō-cho, Shiga. Fundada en 1869 cerca del lago Biwa con certificación GI Shiga, esta pequeña destilería galardonada (~1.000 litros al año) combina dos arroces de sake complementarios con el agua de la cordillera Suzuka para un tokubetsu junmai equilibrado y de alto nivel.
