Tomitsuru Honjikomi (本仕込み) Honjozo de Aichi Shuzo en Aishō-cho, Shiga, emplea métodos de fermentación principal tradicionales para un honjozo directo y auténtico. Fundada en 1869 cerca del lago Biwa, esta pequeña destilería galardonada (~1.000 litros al año) con certificación GI Shiga utiliza el agua de la cordillera Suzuka para un honjozo limpio y honesto, reflejo del meticuloso enfoque artesanal de la destilería.
