Tomitsuru Hiden Tezukuri Honjozo (秘伝手造り本醸造) utiliza Tama Sakae (玉栄) pulido al 70 % en un honjozo artesanal elaborado con receta secreta por Aichi Shuzo en Aishō-cho, Shiga. Fundada en 1869 cerca del lago Biwa, esta pequeña destilería emplea la variedad Tama Sakae, un arroz de sake originario de Shiga cultivado en la región desde el siglo XIX, junto con el agua de la cordillera Suzuka.
