Tomitsuru Daiginjo utiliza Yamada Nishiki pulido al 50 %, elaborado por Aichi Shuzo en Aishō-cho, Shiga, una destilería fundada en 1869 cerca del lago Biwa. Una de las operaciones más pequeñas de Japón con aproximadamente 1.000 litros al año, esta galardonada destilería (3 premios nacionales consecutivos, oro Feminalise) emplea el agua de la cordillera Suzuka para elaborar un daiginjo de pureza excepcional.
