Tenichi Yamahai Honjozo Genshu es un honjozo sin diluir elaborado mediante el método tradicional yamahai en Hayakawa Shuzobu en Kawagoe Town, prefectura de Mie. El iniciador yamahai cultiva bacterias lácticas naturales para construir una levadura robusta, produciendo un sake con acidez pronunciada, umami profundo y el cuerpo concentrado de un genshu sin diluir, muy adecuado para servir caliente.
