Este junmai utiliza arroz Hinohikari al 60 % de pulido y es elaborado por Soukou Shuzo en la ciudad de Oita, la única cervecería de sake con sede en la ciudad dentro de la prefectura. La cervecería, que ha ganado premios incluyendo el oro en el U.S. National Sake Appraisal por su tokubetsu junmai Souju, aplica levadura activa de Kumamoto en toda su gama de arroz puro.
