El junmai ginjo Kouju de Soukou Shuzo se elabora con arroz Hinohikari pulido al 55 %, sin filtrar, en la única cervecería de sake que subsiste en la ciudad de Oita. Los catadores describen aromas de arroz, manzana, ácido láctico y un toque de azúcar glas, con un paladar ligero y agridulce sabroso sostenido por una acidez fina y un final limpio y ligeramente amargo.
