Hyogo Kita Nishiki y Yamada Nishiki, ambos cultivados en los propios campos libres de productos químicos de la cervecería, se utilizan para este Honjozo genshu crudo y sin diluir. El arroz de cultivo propio y el agua de manantial extraída de un pozo en el recinto de la cervecería de Akashi se combinan con una fermentación meticulosa a baja temperatura para dar al sake un umami denso y un final seco y asertivo.
