Description

El bodaimoto es uno de los métodos de iniciación de fermentación más antiguos de Japón, desarrollado por los monjes del templo Shoryakuji en Nara durante el período Muromachi y estrechamente vinculado al patrimonio cervecero de la región de Nara. Este junmai de Nishida Shuzo revive esa tradición, que sustenta gran parte de las técnicas modernas de elaboración de sake.
