Junmai Ginjo genshu (sin diluir) a 60% de pulido, madurado durante la primavera y el verano antes de comercializarse como hiyaoroshi, sake de otoño de pasteurización única, en Yukitsubaki Shuzo en Kamo, Niigata. La maduración en frío prolongada redondea el sabor y profundiza el umami del arroz, conservando el final limpio característico de la cervecería.
