Kenshin Junmai Ginjo es la expresión ginjo central de Ueno Shuzo en Joetsu, Niigata, y representa el compromiso de la cervecería con el estilo limpio y ligero por el que Niigata es renombrada. Elaborado sin alcohol destilado añadido, se basa íntegramente en la fermentación del arroz para desarrollar sus delicadas notas afrutadas y florales. El agua de deshielo suave de la región aporta una sensación en boca agradable y un final seco y nítido.
