El Junmai Sanshu de Kawatsuru utiliza arroz Yamadanishiki pulido al 65%, embotellado sin filtrar (muroka), sin pasteurizar y sin diluir (namagenshu) para preservar la máxima frescura. El Yamadanishiki, cultivado en el cálido clima del oeste de Japón, combina naturalmente con el entorno del mar Interior de Seto en Kagawa, ofreciendo el característico cuerpo pleno de la variedad, umami fino y estructura limpia en forma cruda y vibrante.
