Houraitsuru es la expresion fundamental de Harahonten, una pequena bodega de la ciudad de Hiroshima fundada hacia 1805 y operada en una instalacion subterranea que proporciona estabilidad termica natural para la elaboracion durante todo el ano. El propietario-maestro actua como unico toji, utilizando el agua blanda caracteristica de Hiroshima y arroz de origen local para producir un sake con la textura limpia y suave asociada a la tradicion brasicola de Hiroshima. Esta etiqueta accesible refleja la filosofia central de la bodega: una elaboracion cuidadosa y artesanal en pequenos lotes.
