El arroz Yamada Nishiki pulido al 50 % es elaborado por una pequena empresa familiar en Iga, cerca del lugar de nacimiento del poeta haiku Matsuo Basho, utilizando levadura de flor de estilo Akita (AK-1) para un sake que prioriza el equilibrio de sabores sobre la mera intensidad aromatica. Producido en cantidades limitadas mediante prensado en bolsa y pasteurizacion en botella, este galardonado daiginjo ha obtenido el oro en concursos nacionales de cata.
