El arroz Akita Komachi pulido al 60 % se elabora con levadura natural derivada de flores de azalea en esta bodega de Gujo City, Gifu, fundada en 1740, dando lugar a un tokubetsu honjozo con un SMV de +5,0 y una acidez de 1,4. La levadura de azalea aporta un carácter aromático floral distintivo, junto a un final seco y limpio.
