El arroz Omachi de Bizen, pulido al 55 %, se fermenta al estilo yamahai en Uehara Shuzo con levadura silvestre cultivada en casa y se prensa mediante el método de equilibrio kioke tenbin. La variedad Omachi aporta una dulzura suave y redondeada y un rico umami, mientras que la fermentación yamahai añade una complejidad profunda y estratificada con un pronunciado carácter láctico. Embotellado como muroka namagenshu sin filtración, pasteurización ni dilución.
