El Yamada Nishiki constituye la base de este sake de estilo yamahai de Uehara Shuzo en Shiga, elaborado con levadura silvestre cultivada en casa y prensado mediante el raro método kioke tenbin de equilibrio de cuba de madera. Producido sin ácido láctico comercial ni levadura añadida, refleja la plena intensidad del jikomi yamahai tradicional, denso, complejo y firmemente estructurado.
