El Yamada Nishiki constituye la base de este namagenshu junmai ginjo de Uehara Shuzo en Shiga, elaborado sin pasteurizar ni diluir y prensado mediante el célebre método kioke tenbin (balanza de cuba de madera) de la destilería, una técnica conservada por menos de seis destilerías en Japón. La levadura silvestre cultivada en casa y la tradición yamahai de la destilería otorgan al sake su característico cuerpo pleno y su frescura vívida.
