Daiginjo Genshu Shizukutori de Ishimoto Shuzo en Niigata es un daiginjo sin diluir producido mediante el método de goteo shizuku, donde el sake se suspende en bolsas de tela y se deja gotear por gravedad sin ningún tipo de prensado. Esta técnica laboriosa produce solo un pequeño volumen de sake excepcionalmente puro y delicado, libre de cualquier presión de prensado. El resultado es un daiginjo genshu premium y concentrado con aromas refinados y una textura sedosa y compleja.
