El arroz Omachi fermentado por el método tradicional kimoto forma el núcleo de este muroka nama genshu de Okutoshouji en Ako, Hyogo. El arduo desarrollo de ácido láctico del kimoto, junto al carácter más terroso y de cuerpo pleno del Omachi, da como resultado una acidez pronunciada, profundidad sabrosa y una rica concentración sin diluir.
