Matizado, seco con una acidez compleja y fina procedente de un método de producción decididamente clásico y laborioso. El método se basa en organismos ambientales para elevar la acidez del starter (shubo) hasta el punto en que la levadura, utilizada en la fermentación, pueda prosperar. El sake presenta notas de avena y especias oscuras. Cuerpo medio con un final seco en el paladar.
