Este es nuestro segundo Dai Ginjo (el primero fue en colaboración con Nanbu Bijin, una cervecería de 6a generación). El Dai Ginjo se considera un estilo de sake superpremium debido al esfuerzo, el tiempo y el coste que conlleva su producción. Utilizamos 100 % de arroz de elaborador (yamada nishiki), una levadura moderna única y no permitimos que la fermentación superara los 11 grados Celsius. El resultado está pensado para ser delicado y lujoso.
