Bonki es un junmai de bajo contenido alcohólico (8 % ABV), elaborado con Yamada Nishiki cultivado orgánicamente por la propia cervecería, fermentado para producir un perfil similar al vino blanco, con acidez viva y carácter refrescante. El nombre hace referencia a un antiguo recipiente de madera para el arroz, y este sake se disfruta mejor bien frío.
