El arroz Yamada Nishiki es la base de este daiginjo de Nakao Shuzo en Ibaraki, Osaka, una cervecería cuyos orígenes se remontan al período Muromachi y que prensa su sake por gravedad natural en fune tradicionales. La levadura propia y una fermentación de 30 días aportan un carácter seco, pulido y suave.
