Wabisabi Junmai de Nakao Shuzo en Ibaraki, Osaka, se produce en una cervecería con más de 400 años de historia desde el período Muromachi, donde el prensado tradicional en fune extrae el jugo únicamente por gravedad. Pulido al 60 % y fermentado con arroz Kinuhikari, presenta un carácter seco, limpio y sin adornos, adecuado para el consumo diario.
