Der junmai ginjo Kouju von Soukou Shuzo wird aus Hinohikari-Reis mit 55 % Polierrate ohne Filtration in der einzigen verbliebenen sake-Brauerei in Oita City gebraut. Verkoster beschreiben Aromen von Reis, Apfel, Milchsäure und einem Hauch Puderzucker, mit einem leichten, süßlich-würzigen Gaumen, getragen von feiner Säure und einem sauberen, leicht bitteren Abgang.
