Der Ginjo von Kuramitsu Shuzo wird in der einzigen verbliebenen sake-Brauerei in Oita City gebraut und verwendet unterirdisches Wasser des Ono-Flusses in Kombination mit der esterreichen Hefe der Brauerei. Die 1864 gegründete Brauerei wendet sorgfältige handwerkliche Methoden auf ihre gesamte Ginjo-Range an, um einen duftigen, sauberen Stil zu erzielen.
