Mishima Omachi, der historische Sake-Reis aus der Ibaraki-Region, der 1996 nach seinem Verschwinden in der frühen Showa-Zeit wiederbelebt wurde, wird für diese minimal raffinierte Abfüllung von Nakao Shuzo in Osaka auf lediglich 83 % poliert. Das geringe Polieren erhält die äußeren Schichten des Korns und bringt den charakteristischen, erdigen Reichtum dieser seltenen lokalen Sorte zum Ausdruck.
