Hidatakayama Junmai Ginjo wird von Oitashuzouten in der Präfektur Gifu aus auf 60 % oder weniger poliertem Reis gebraut und fängt das Wesen der Brauereiregion Hida-Takayama ein. Ohne Alkoholzusatz drückt er natürliche ginjo-Aromen neben dem sauberen, mineralischen Charakter des Gifu-Bergwassers aus. Die junmai-Bezeichnung stellt sicher, dass das Aromaprofil ausschließlich durch Reis, Wasser, koji und Hefe geformt wird.
