Auf 75% poliert, wird dieser Sake der Josen-Kategorie aus der 1752 gegründeten Kumamoto-Brauerei mit Grundwasser aus dem Kikuchi-Schluchtsystem gebraut. Die Brauerei folgt dem grundlegenden Sake-Braugebot ichi-koji, ni-moto, san-zukuri und wendet in jeder Phase sorgfältige Handwerkskunst an.
