Brewed with the rare heirloom Asahi rice from Okayama, a variety prized for its texture but notoriously difficult to grow, this Junmai Daiginjo shows a distinct Muscat grape character on the nose. The palate is medium bodied and round, with notes of wildflower honey and tropical fruit balanced by clean acidity and gentle umami. Made using an in house yeast, it stays consistent and refreshing even when served cold.
