Die Wasserqualität ist mittelhart. Der durchschnittliche Poliergrad des Reises beträgt 60 %. Als Rohreis verwendet Daiginjo Yamada Nishiki (Spezialgebiet A). Für alle anderen Kategorien wird Reis aus der Präfektur Hiroshima verwendet. Der sake mit spezifischer Bezeichnung wird aus hochpoliertem, flachem Reis gebraut, hauptsächlich Hachimon Nishiki und Koi Omachi.
