Tanaka Sake Brewery Inc. has been brewing in the Ohara district of Mimasaka City, Okayama Prefecture, for over 130 years, using the cold northern Okayama climate and mountain-filtered clear water. The brewery presses its moromi slowly using a rare traditional fune (wooden pressing vessel), drawing out umami-rich rice flavors. Oharashiraume has long served as a beloved local staple across the Mimasaka region.
